Done anything creative in the kitchen lately? I highly recommend it – intentional or not. My invention last week was accidental, but it was still fun. I wanted to make banana bread but had no loaf pan. So I channeled a fix based on Elaine’s “muffin tops” (famous episode on Seinfield.)Like her, I also like the tops and find the middles limp and soggy. No loaf pan? Great. Channel Elaine and bake them in a flat 8” pan. Hence – little flat banana bites! No soggy centers. Lots of walnuts. Tried with honey. Yum. Sometimes it’s little creative solutions that make life fun!

BB’s Banana Bread Bites (Adapted from a Food Network Recipe)
½ cup brown sugar
4 Tbs. (1/2 stick) of butter – I used goat’s milk butter
1 egg
3 ripe bananas (used twice as much as Food Network’s)
1 Tbs. milk
1 cup flour
½ t. baking powder
½ t. baking soda
½ t. salt
Preheat oven to 325. Butter an 8-inch square pan
Cream the brown sugar and butter in bowl until light and fluffy. Add egg and beat.
In another bowl mash bananas with a fork, mix in the milk. In yet another bowl, mix the flour, baking powder, baking soda and salt.
Add the banana mixture to the creamed sugar and butter, stir until combined. Add the flour mixture mixing until flour disappears.
Smooth into pan. Bake about 20 minutes until the middle springs back under your touch. Cool on a rack.
The great thing about this recipe is that because the batter is only about an ¾ inch deep in the pan, the batter cooks in about 1/3 the time required for conventional banana breads.
